Blueberry Muffins

Ingredients

195g McDougalls 30% Wholegrain Self Raising Flour
150g Caster sugar
1/4 tsp salt
80ml Vegetable oil
1 Large egg
80ml Milk
1 1/2 tsp Vanilla extract
150g Blueberries
Optional: 1 tbsp of caster sugar for the top

Directions

1. Preheat oven to 200°C/ 180°C Fan/ Gas Mark 6, place muffin cases into a muffin tray.
2. In a bowl mix the flour, sugar and salt. In a jug mix the oil, milk and vanilla extract. Add the wet ingredients to the dry and mix till it comes together.
3. Gently fold in the whole blueberries until they are evenly dotted throughout the cake mix. Do not over mix.
4. Scoop into the muffin cases. Optional: Sprinkle with 1 tbsp of sugar over the top.
5. Bake for 15 to 20 minutes.
6. Allow to cool for a few minutes before placing on a cooling rack.

Top tips

Try adding in the zest of one lemon to add a refreshing twist to your muffins.

Or, why not try making a blueberry loaf cake by placing the batter into a lined loaf tin and baking for 40-45 minutes at 170°C.
